There aren't many times our dinners are one color shy of a complete display of all the rainbow hues, so i wanted to share with you our very colorful meal this evening. If we had some eggplant dish it would have been completed!

Anyways, lots of things going on. Many fun things happenings.(a few difficult things...) but overall we're staying busy. This weekend Charlie and I got away. Will try to post those pics soon...

spinach, onion, garlie, o.o. sauted. then topped over ckn. breasts cooked at 350' for about 30 minutes. //pinapple, red peppers, (Home made! first time!!) hummus, bluberries, asparsges w/garlic and raw carrotts
it was yummy, but i need to learn to make my hummus smoother, it was chunky!

Speaking of color though, have you ever served up your dinner to find that everything's pretty much the same color? This has happened to me before! =)
